Cheese Bread based on CreationS Cheese and Proson Uni-force Royal

Ingredients

  • 7500 g - 75% Flour
  • 2500 g - 25% CreationS Cheese
  • 400 g - 4% Fresh yeast
  • 150 g - 1.5% Salt
  • 5500 g - 55% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26ºC.
  • Scale: dough pieces approx. 450 grams and rounding.
  • Dough proof: approx. 15 mintues.
  • Mould as a small loaf and decorate with chees if desired. Place the dough pieces on baking sheets.
  • Final proof: approx. 60 minutes.
  • Baking: approx. 30 minutes at 225ºC with steam.
