Cheese Bread
Cheese Bread based on CreationS Cheese and Proson Uni-force Royal
- 7500 g - 75% Flour
- 2500 g - 25% CreationS Cheese
- 400 g - 4% Fresh yeast
- 150 g - 1.5% Salt
- 5500 g - 55% Water approx.
Mix all ingredients into a smooth and well developed dough.
Dough temperature: approx. 26ºC.
Scale: dough pieces approx. 450 grams and rounding.
Dough proof: approx. 15 mintues.
Mould as a small loaf and decorate with chees if desired. Place the dough pieces on baking sheets.
Final proof: approx. 60 minutes.
Baking: approx. 30 minutes at 225ºC with steam.
