Dough temperature: approx. 26°C.
Scale: approx. 2200 grams for 30 pieces.
Dough proof: approx. 10 minutes.
Dividing and round up.
Final proof: approx. 70 minutes.
Bake: approx. 10 minutes at 250ºC.
