Working method
Mix all ingredients into a smooth and well developed dough
Dough temperature: approx. 26ºC
Scale: Dough pieces approx. 450 gram and rounding
Dough proof: Approx. 35 minutes
Mould as a long loaf. Decorate with the mixture of sesame and sunflower seeds and place the dough pieces into baking tins
Final proof: Approx. 65 minuten
Just before baking incise the dough pieces
Baking: approx. 35 minutes at 230ºC with steam
Baking in rotation oven: Approx. 30 minutes at 210ºC.
