Ingredients

  • 5.700 g Water approx. 57 %
  • 5.000 g Wholemeal 50 %
  • 5.000 g SonFit ProHeart 50%
  • 220 g Fresh yeast 2.2%
  • 100 g Sonplus Krokant Extra (Crispy) 1%

Decoration:

  • 250 g Sesame seeds 2.5%
  • 250 g Linseed 2.5%
  • 250 g Sunflower seeds 2.5%

Working method

  • Mix all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26°C.
  • Scale dough pieces approx. 445 gram and rounding.
  • Dough proof: approx. 40 minutes.
  • Mould as a long loaf and decorate with the mixture of sesame seed, linseed and sunflower.
  • Place the dough pieces on inserter or baking sheets.
  • Final proof: approx. 65 minutes.
  • Before baking incise three times
  • Bake: approx. 35-40 minutes at 225ºC
  • Bake in rotation oven: approx. 35-40 minutes at 210ºC
