Soft White Buns based on Proson Rustic, SonExtra Shortening Clean Label and SonExtra Topmals

Ingredients

  • 10000 g - 100% Flour (high-protein)
  • 400 g - 4% Fresh yeast
  • 300 g - 3% PROSON RUSTIC
  • 200 g - 2% SONEXTRA SHORTENING CLEAN LABEL
  • 200 g - 2% Sugar
  • 150 g - 1,5% Salt
  • 100 g - 1% SONEXTRA TOPMALS
  • 5500 g - 55% Water approx.

Working method

  • Knead all ingredients into a smooth and well develloped dough.
  • Dough temperature approx. 26°C.
  • Scale dough pieces approx. 1.800 g (30 pieces) and rounding.
  • First proof: approx 10 minutes.
  • Divide, round up and place on baking sheets.
  • Final proof: approx. 80 minutes.
  • Spray the buns with egg wash just before baking.
  • Bake: approx. 9 minuten at 260-270°C.
