White Toast Bread based on FermenSon Duo
- 10.000 g - 100% Flour
- 6.200 g - 62% Water approx.
- 200 g - 2% Fresh Yeast
- 136 g - 1,36% Salt
- 100 g - 1% FERMENSON DUO
- 100 g-1% SONEXTRA SHORTENING CLEAN LABEL
Knead all ingredients into a smooth and well developed dough.
Dough temperature approx. 27°C.
Scale dough pieces approx. 910 grams and rounding.
Dough proof approx. 5-10 minutes.
Mould as a long loaf, place the dough pieces into toast baking tins.
Final proof approx. 60-70 minutes.
Baking approx. 30 minutes at 230°C.
